Merlot & Barbera, Piedmont

La Rossa: the tasting notes

The two grapes do different jobs. Merlot brings the weight and the soft dark fruit, plum and blackberry. Barbera brings acidity and grip, which matters more here than it would in an ordinary red. A wine with no residual sugar has nothing to fall back on, so the structure has to come from the fruit and the acid.

The result is dry, medium to full bodied, with a long finish and no sweetness at any point. Serve it at around 16 to 18°C, slightly below room temperature.

Barrel matured

Oak Aged Red: barrel matured, still 0g sugar

The Oak Aged Red is La Rossa taken further. The wine is fermented to zero sugar first, then matured in oak barrels, which adds vanilla, spice and a rounder texture.

The oak changes the flavour, not the figures. It is still 0g sugar, 0g carbs and 11% vol.

All calculated from 60 kcal per 100ml. Because there is no sugar in the wine, every calorie comes from the alcohol, which is why the figure holds steady across the whole range.

Fermented to dryness

Sugar free red wine: how it is made

Red wine is not naturally sugar free. Grapes arrive full of it, and fermentation is the process of yeast converting that sugar into alcohol. Most fermentations stop before the job is finished, either because the winemaker halts them or because the yeast stalls. Whatever is left is residual sugar.

We use selected yeasts and a longer, cooler fermentation that runs until there is nothing left to convert. Nothing is added. Nothing is stripped out afterwards.

This is also why the wine is 11% rather than something weaker. All that sugar became alcohol.

0g carbohydrate

Low carb and keto red wine

Carbohydrate in wine comes almost entirely from residual sugar, so a wine with no sugar has no carbs.

That makes La Rossa workable on a ketogenic or low carb plan, where a standard dry red at two to four grams of carbohydrate per glass eats into a daily allowance that might only be twenty grams.

If you are following a plan supervised by a clinician, check with them first.

Is red wine higher in calories than white?

Usually a little, but not because it is red.

Colour has almost nothing to do with it. What matters is alcoholic strength and residual sugar. Red wines tend to be bottled at slightly higher strengths than whites, which is where the difference comes from.

In our range there is no difference at all. La Rossa and Il Bianco are both 11% vol with 0g sugar, so both are 60 kcal per 100ml. Choose on what you are eating, not on the number.

At the table

What to eat with it

The acidity from the Barbera makes this more flexible than a soft, fruit forward red.

It works with roast lamb, beef, hard cheeses, mushroom dishes and anything tomato based, where the acid in the wine meets the acid in the sauce. The Oak Aged Red handles richer, slower cooked food better.

Frequently asked questions

105 calories in a 175ml glass, 75 in a 125ml glass and 150 in a 250ml glass. The wine is 60 kcal per 100ml.

No. It contains 0g sugar per serving. Fermentation converts every gram of natural grape sugar into alcohol, which is why the wine is a full 11% vol.

Most dry reds carry a few grams of carbohydrate per glass. La Rossa carries none, because it has no residual sugar. That makes it easier to fit into a ketogenic plan than a standard bottle.

Merlot and Barbera, grown in the Asti hills of Piedmont in north west Italy.

Sulphites usually get the blame, but the evidence points more towards tannins, histamines and the alcohol itself. Our wines carry around 80% fewer sulphites than most regular wines, though we would not claim that prevents headaches.
