Sauvignon & Chardonnay, Piedmont
Il Bianco: the tasting notes
Sauvignon carries the aromatics and the citrus edge, the part that makes the wine smell like something is about to happen. Chardonnay fills it out and stops it being thin. That balance matters more in a zero sugar wine than in an ordinary one, because there is no sweetness to round off the edges.
Crisp, dry and clean, with green apple and citrus and a mineral finish. Serve it properly chilled, around 8 to 10°C.
Over 100 days in barrel
Oak Aged White: over 100 days in barrel
The Oak Aged White is Il Bianco held in oak for more than 100 days.
What comes out is a different proposition. Toasted almond, vanilla and a honeyed richness sitting over the exotic fruit underneath, with a much rounder texture. It is a food wine rather than an aperitif.
The numbers do not move. Still 0g sugar, 0g carbs, 11% vol.

Fermented to dryness
Sugar free white wine: how it is made
White wine hides sugar better than red does. A wine can taste crisp and dry and still carry several grams per litre, because acidity masks sweetness on the palate. Plenty of popular whites sit well above what people assume.
Ours is fermented until there is nothing left to convert. Selected yeasts, a longer and cooler fermentation, and no intervention afterwards. Nothing added, nothing stripped out.
This is why it is a full 11% vol. The sugar did not disappear, it became alcohol.
0g carbohydrate
Low carb and keto white wine
No residual sugar means no carbohydrate. Il Bianco carries 0g carbs per serving.
A standard dry white usually carries two to four grams per glass. On a plan with a twenty gram daily ceiling, that is a meaningful share of the day gone on one drink. This is not.
If your plan is supervised by a clinician, check with them first.
One of the lowest calorie whites available
At 60 kcal per 100ml there is not much room below this without cutting the alcohol.
That is the trade most low calorie whites make. Reduce the strength, reduce the calories, and accept what happens to the wine. We kept the strength at 11% and took the sugar out instead, which is why the figure is what it is without the wine being a compromise.
At the table
What to eat with it
Il Bianco suits the obvious things and does them well. Fish, shellfish, goat’s cheese, salads, anything with lemon in it. The acidity does the work.
The Oak Aged White wants richer food. Roast chicken, creamy pasta, smoked fish.

Questions
Frequently asked questions
105 calories in a 175ml glass, 75 in a 125ml glass and 150 in a 250ml glass. The wine is 60 kcal per 100ml.
Yes, completely. It contains 0g residual sugar, which makes it as dry as a wine can technically be. Il Bianco tastes crisp and citrus led rather than austere, because the Chardonnay gives it body.
Neither. 0g sugar and 0g carbohydrate per serving. Carbohydrate in wine comes almost entirely from residual sugar, so removing one removes the other.
Slightly, as a general rule, because white wines are often bottled at lower strengths. But colour is not the cause. Strength and sugar are. In our range red and white are identical at 60 kcal per 100ml.
Sauvignon and Chardonnay, grown in the Asti hills of Piedmont in north west Italy.
